Il a souvent un tronc tordu. Le bois est dur et pesant et on le recherche en menuiserie et \u00e9b\u00e9nisterie. La ramure est puissante et touffue. On\u00a0 appr\u00e9cie son ombre. Le fruit du caroubier est form\u00e9 d\u2019une enveloppe \u00e9paisse, verte et luisante (non, \u00e7a n\u2019a rien \u00e0 voir avec un \u00ab\u00a0vert luisant\u00a0\u00bb), ressemblant \u00e0 une gousse de haricot. A maturit\u00e9, le fruit \u00e0 saveur douce et sucr\u00e9e devient brun. On l\u2019utilise en sirop et en confiserie, ou encore en teinture pour son jaune \u00e9clatant. Saviez-vous par exemple, que de l\u00e0 vient l\u2019origine du mot \u00ab\u00a0carat\u00a0\u00bb utilis\u00e9 pour la mesure de l\u2019or. La graine du caroubier s\u2019appelle \u00ab\u00a0qirat\u00a0\u00bb en arabe.<\/p>\n<p>Dans la Bible, il n\u2019est fait mention qu&rsquo;une seule fois du mot caroube.
